Fermentation at controlled temperature in steel tanks, with a pre-fermentative and post-fermentative phase of a total of 20/22 days. Malo-lactic fermentation and elevation partly in large oak barrels and partly in barriques for 4-6 months. Bottle aging for 4 months.
Serve at a temperature of 16-18 ° C, in medium-sized glasses, it goes very well with cold cuts (ciauscolo, coppa di testa), first courses with meat sauce, roast meat and fish, fish soups and stockfish all'anconetana, medium-aged cheeses.
