Grape variety:  Pecorino 100% Production area fro La Torre del Nano. Offida, hilly area, south/west side (200 meters above sea level). Soil: medium clayey. Harvest period:  Between early and mid-September. Harvest:  Grapes harvested exclusively by hand in the early morning hours in small crates at a temperature between 12°C and 15°C to preserve the characteristic aromatic complement. Alcoholic fermentation:  in stainless steel at a temperature of 13.5C for approximately 20 days. Maturation: in wood on fine lees until bottling in March. 6 months in bottle.
